Online Bake Sale for the Philippines: Auction Preview


Just three days left before our Online Bake Sale goes live! After a week of promoting and calling out for donations, we now have a total of 48 items for auction donated by 38 bakers/bloggers from 5 countries. (A MILLION THANKS to all our awesome bakers/bloggers for their generosity!) Most items are only available for shipping within the US, but we have 4 items available for international shipping2 within Europe and 1 in the UK.

Now that the items for auction are in place, the next step is to make sure we get bids for all of them...and when I say bids, I'm hoping for HIGH ones. My goal is to raise at least $2,500, but if we can raise more, that will make not only me happy, but much more the Filipinos who are now in great need for help in rebuilding their lives...

***UPDATE*** Online Bake Sale for the Philippines: MEET THE BAKERS/DONORS!

Over the past two weeks, my family and I couldn't help but be heartbroken over the catastrophe that took place in the Philippines. Watching the news and seeing our fellow Filipinos suffering in the aftermath of Typhoon Yolanda, with no food to eat and no place to stay, is something very hard, and we all wish we could do more. We all thought that hosting a fundraiser is a good thing to do, but with all the fundraisers going on in our area, there was no point in organizing another one. There came the idea of doing an online bake sale instead...where we can reach more people (not just our neighbors and friends) to help...which will mean a better chance of getting more donations for our "kababayans"(fellow Filipinos) in need. So last Thursday (Nov. 14), I launched Online Bake Sale for the Philippines...

With just 4 days left before the bake sale goes live, I would like to take this opportunity to tell everyone that I am truly thankful for all the support I am getting for this event which will benefit Sagip Kapamilya, an emergency humanitarian assistance program of ABS-CBN Foundation, Inc. which provides food and non-food relief to affected communities of disasters, and do rehabilitation and disaster risk reduction projects. We now have a total of 43 baked goodies for auction coming from 38 bakers/bloggers including myself. Even Sabrina Modelle of The Tomato Tart who hosted the successful Online Bake Sale for Japan in 2011 is now with us in this Online Bake Sale for the Philippines!

Online Bake Sale for the Philippines 11/25/2013

Last November 7, 2013, the Philippines was hit by super typhoon Haiyan. Despite government preparations, this category 5 typhoon left the hard hit areas in ruins. Houses and buildings were razed to the ground due to the very strong wind. Power and telecommunication lines were cut off. And the worst, thousands of people died and almost half a million were left homeless. Given the scale of the destruction, the Philippines is facing a very long and difficult road to recovery…and the Filipinos need all the help they can get.

Though I'm thankful that both my family and my husband's family are all safe and weren't badly affected by this calamity, my heart breaks to see my fellow Filipinos suffering. For the past six days, I've been thinking of what I can do to help ease their burden. I've personally made a donation to CRS, I've also finished packing some clothes and towels for donation, and using social media, I've tried to encourage other people to give support. I know that I've helped in my own little way, but I feel that it's not enough! I know I have to do more than that. Inspired by the online bake sale I joined 2 years ago, I thought why not host one myself for my beloved native country. The fear that I've not been active in the blogging community gave me second thoughts. What if nobody joins? Nevertheless, I tried reaching out to some of my blogger friends to see if I can count on their support. To my surprise, a lot of them are willing to lend a hand! I am truly grateful to know some very supportive people in the blogging world! Adora of Adora's Box, Amy of uTry.it, Jessica of Kitchen Belleicious, Liz of That Skinny Chick Can Bake, Kate of Diethood, Manu of Manu's Menu, Sandra of Sandra's Easy Cooking, Serena of Serena Bakes Simply from Scratch, Sue of Munchkin Munchies, Swathi of Zesty South Indian Kitchen, and Tiffany of Como Water were the first ones to email me. Knowing that I have a bunch of wonderful bloggers behind me gave me the confidence that I can make this online bake sale possible!
The auction will take place on November 25, 2013. All donations from this bake sale will go directly to Sagip Kapamilya. Meaning "rescue family" in Filipino, Sagip Kapamilya is the emergency humanitarian assistance program of ABS-CBN Foundation, Inc. which provides food and non-food relief to affected communities of disasters, as well as engage in rehabilitation and disaster risk reduction projects. They have launched Operation Tulong Na Tabang Na Tayo Na" which means "Let's Help" and aims to raise funds that will aid in the rescue and rehabilitation efforts for the victims of typhoon Yolanda. By either donating your baked goods or being a buyer, you will be supporting a great cause and helping bring concrete hope to Filipinos in their moment of greatest need.

My goal is $2,500. With your help, I know we can make this happen!

I'm sure some of you are asking how this online bake sale works? Well here are the basics:
  • People who are donating to the bake sale won't be sending me the items they are donating. They will just email me pictures and descriptions of their baked goodies. This is open to anyone even those outside of the US. Bakers have the option to ship "only from country of origin" or internationally.
  • Two days before the bake sale,  I will have pictures with descriptions posted for bidders to have an idea of the yummy goodies they can bid on.
  • On the day of the bake sale which is November 25, bidders can bid on items by filling out a bid form which will be posted on that day.
  • All bids start at $20 and go up in $1 increments. You can go for "buy it now" option for $200.
  • The bidder with the highest bid wins! All winners will be announced a few hours after the bake sale has closed. Each winner will pay the specified bid amount by making a direct donation to Sagip Kapamilya  through ABS CBN Foundation International and then, will have to forward the donation receipt to bakesale4pinas{at}gmail{dot}com within 24 hrs.
  • Once the donation goes through I will e-mail the baker the winner’s address and it will be the baker’s responsibility to bake and send/mail the baked goods to the winner within 7 days.

Ground Coffee with Chocolate Chips and Dates Cookies

Remember the review I shared here on the blog last week? I hope you guys read it and will be able to try PURO Fairtrade Coffee. As for me and the hubs, we are still enjoying the rest of the coffee that was sent to us...and today, I am happy to share with you a cookie recipe that features PURO Organic Ground Coffee. As I've mentioned in the review, PURO Organic is made up of 100% of the finest Arabica and combines soft notes of sweet chocolate with tangy citrus. That makes it the perfect blend for these Ground Coffee Beans with Chocolate Chips and Dates Cookies.

Being a big lover of coffee, the hubs is truly a big fan of coffee cookies. It's actually what he most frequently asks me to make next to peanut butter cookies...but yesterday, even without him asking, I thought of making some, just so I could try using PURO Fairtrade Coffee in baking. The result??? Hmmm...there's really no big difference compared to the previous times I made these cookies using other brands of coffee. I may say it's just a bit lighter in taste and milder in aroma, but as usual, these cookies are very tasty and so delightful. Using PURO Organic Coffee added depth to the flavor of bitter sweet chocolate which made these cookies even more exciting to eat!

Lengua De Gato

Tomorrow is Valentine's Day, so I thought I'd bring you another Filipino favorite to sweeten your celebration. Known as Lengua De Gato, these thin buttery sugar cookies shaped like cat’s tongue can make a wonderful treat for the sweet ones in your life...

In the Philippines, Lenguas De Gato which are usually packed in a clear plastic jar with yellow lid, are a favorite “pasalubong” (homecoming gift), and you can find them in bus terminals, roadside pasalubong stalls and now, even in the mall and grocery stores. I haven't had these treats for years, so when I saw a recipe for Lengua De Gato in my new Goldilocks Bakebook, I was so anxious to try it! I immediately made two batches, one with the regular butter flavor...and the other one, with a hint of chocolate. They're really easy to make. The only thing I found difficulty with is making them into equal size cat's tongues. :) I also noticed that the plain butter ones didn't turn out as yellowish as they're supposed to be. I even added one egg yolk to the recipe, but they still turned out pale. But they are delicious and close enough to the Lengua De Gato I've always loved. Try it yourself...I'm sure that like me, you will love their melt-in-your-mouth goodness!

Chocolate Chip Cookie Cake for My Princess Cherlin

Today is my youngest daughter's 7th birthday...a day she has been anticipating since the start of 2012. Just like any other typical girl her age, she has been very excited and busy planning about it for months now --- from the food she wants to eat for breakfast, lunch and dinner and the treats she wants to bring to school for her classmates, down to how she wants her birthday party to be. As her mom, it's (of course) my job to make it all happen. :) Oh well, I'm glad that her wishes aren't out of this world! They are actually simple and attainable. She said all she wants is a Nintendo 3DS or an mp3 player...a cookie cake, and a princess themed party where she can invite her friends. She also requested that I prepare fried rice with sausage and egg for breakfast and pancit canton and egg rolls for dinner. For lunch, she asked that her dad and I bring her McDonald's Chicken Nuggets and french fries in school. 

Well, Mommy Tina got everything covered! :) Yesterday, while she was in school, I made her a chocolate chip cookie cake. This morning, she was so thrilled to see it and her birthday gift when she woke up. The breakfast I prepared for her also gave her so much delight. Can you see her big smile??? I know she seems more happier with the DS, but she told me she loved everything and I believe her. :)

During lunch, Ryan and I went to school to eat with Cherlin. She was really happy to have both of us there. It's usually just me so it's a big deal to have daddy this time. For dinner, we'll be having her requested pancit canton and egg rolls. That's pretty much her birthday celebration today...but on Saturday, she'll have her princess party, which she's really looking forward to! I made the personalized invitations and I was able to send them out last week...

Ultimate Chocolate Cream Cheese Cookies

It's the 15th of the month again...and that means it's time to share with you what we made at Baking Partners! The theme for this month's challenge is...
Yes, COOKIES!!! And I got the privilege of selecting one of the three recipes that we could choose from...and I went for this Ultimate Cream Cheese Cookies recipe from Baked Owners Matt Lewis and Renato Poliafito.

I've tried making these cookies before (when I first got my Food & Wine Best of the Best Cookbook Recipes Vol. 14) and I want my friends at Baking Partners to experience its melt-in-your-mouth goodness, hence I chose this recipe. This is very easy to make and the end result is fabulously delicious! You will definitely love the wonderful combination of chocolate and cream cheese in it! It has a very rich flavor and a distinctively chewy texture, and really good by itself...but my daughters insisted that we put frosting on it. Well, I gave in to their request. I made a white chocolate, cream cheese glaze and I let them decorate some of the cookies. I included the glaze recipe here just in case you would like to try it too! 

Some of my friends at Baking Partners made Cornflake Cookies and some others made Homemade Oreo Cookies. Wish I had the time to try them out too! They look really good! Be sure to check them out too! 

Chocolate Dipped Heart Shortbread Cookies

It's Valentine's Day tomorrow, and if you're thinking of last minute treats for your loved ones, here's something perfect! These Chocolate Dipped Heart Shortbread Cookies are easy to make and requires simple ingredients, but will definitely win anyone's heart!

Holiday Shortbread Cookie Sandwiches with Nutella Filling

Just 18 days to go before Christmas...how exciting could that be! One of the things I enjoy about the Christmas season is baking cookies with my girls. It is actually something we love doing together all year round, but we find it such a perfect thing to do during the cold holiday break. Not only does baking help heat up our home, it is always fun to knead, shape and smell the goodness of cookies baking in the oven. Of course, eating the cookies we baked with a cup of hot chocolate or a glass of milk during cold nights is what we love the most. Sharing them with our friends is another thing!

Every year, we make an assortment of cookies which include Peanut Butter Cookies (Clarise and Ryan's favorite), Pecan Sandies (my favorite), Chocolate Chip Cookies (Cherlin's favorite), Snickerdoodle cookies for Santa, our family's favorite Chocolate Crinkles, and the very simple but delicious, Shortbread Cookies

Making Shortbread Cookies is so much fun! Not only are they so easy to make, they also require minimal ingredients. With just butter, flour and sugar, you'll have delicious treats in no time. You can shape and design them as festive as you want or you can just leave them plain and simple.
Clarise and Cherlin love shortbread cookies so much. Regardless of the flavor, shape and design, they just enjoy making and eating them! But do you want to know how they enjoy these delicious cookies the most??? They make cookie sandwiches with them...filled with their favorite Nutella. Does that sound yummy to you???

I love Nutella and I must tell you that Shortbread Cookie Sandwiches with Nutella Filling taste perfect! And if you make your Shortbread Cookies in fancy holiday shapes and dust them with confectioners' sugar, you'll have such easy-to-make but festive addition to your Holiday table!

I love how Holiday-ish these Star Shaped Shortbread Cookies with Christmas tree cut out in the middle look. The design is actually Cherlin's idea. We made these yummy treats together while Clarise was at choir practice...and we all had fun eating them after dinner. Oh well, Cherlin & I actually had one each just after taking pictures. You can't blame us - they're so good!!! :)

Chocolate Pecan Crinkles

As the girls and I were wrapping Christmas presents yesterday, I suddenly felt a tinge of sadness welling up inside me...and it was because I terribly miss my mom. You see, gift wrapping was one of those many things I enjoyed doing with her. I can still remember how much fun we had wrapping presents together. But I must admit that it was actually the after-gift-wrapping snacks that I enjoyed the most. After every gift wrapping session, my mom would serve chocolate crinkles and hot chocolate(which during my time was either Milo or Ovaltine). I'm sure you all know what Chocolate Crinkles are. They are those yummy chocolate cookies coated with confectioners sugar that "crinkles" or "cracks" as the cookies bake. I love them since I was a kid until now, not just because they are delicious but much more because they remind me of the fun times I had with my mother.

To brighten up my mood, I thought of baking Chocolate Crinkles. Clarise and Cherlin both love these soft, fudge-like chocolate cookies, and they enjoy helping me make them too. So instead of finishing the gift wrapping task, the three of us headed to the kitchen and made these delicious treats instead.
I'm sure my mom would love this version with ground pecans. It adds a bit of flavor but keeps the cookies smooth and soft.

Peanut Butter Cookies

I must say up front that I am not a huge fan of peanut butter...but Ryan and Clarise are! That's why we always have it in our pantry...big jars of them! They both love it in sandwiches...Ryan with cheese and Clarise with strawberry jam. She enjoys using it as dip for carrots & celery too! And if there's one kind of cookie that Clarise can't live without, I think it would be peanut butter cookies!

I usually don't like making food that I know I won't enjoy myself...but because it's my daughter's favorite, I have no choice.  This is why I really love this effortless peanut butter cookie recipe! It's so fast and easy to make! You'll have delicious homemade peanut butter cookies in less than 20 minutes! No sweat!

If you love peanut butter cookies as much as Clarise does, this one's for you...



Prep Time:~10 mins              Cook Time:~10 mins               Yield: 36 pcs.                    

Ingredients:
  • ½ cup butter
  • ½ cup peanut butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 2 Tbsp milk
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • ½ tsp vanilla
  • 1 ¾ cups flour
  • ½ cup white chocolate morsels

Pecan Sandies

What a great news I got last Saturday! I won A Latte with OTT,A's Clabber Girl Iron Chef Challenge! It's my first time in my 3 ½ months of blogging...and I am so excited and glad about it! Though I won in Food Frenzy's St. Patrick's Day Contest, I feel that this one is different. It's one I can call "the real thing" because unlike Food Frenzy's recipe challenge where I had to promote my entry (Almond and Pandan Sapin-Sapin) on facebook, twitter and foodbuzz to get votes, my entry (Inipit) to the Iron Chef Challenge was actually chosen by a judge. 

Judge April Osburn, Clabber Girl’s Culinary Classroom Chef had the following to say about my entry: "I chose this recipe/blog because I thought the recipe was unique and the blog was well written. She told the history of the recipe and had great photos. She made several references to Clabber Girl Baking Powder and even had a link to our website."

Awesome is all I can say! I want to thank Amy Eizinger of A Latte with OTT'A for hosting the  monthly Iron Chef Challenge, Clabber Girl for sponsoring this month's challenge and of course, Judge April Osburn for choosing my entry.  She made  me feel that I've really done a good job in this one!

As a way of thanking Clabber Girl, today I'm featuring a favorite cookie recipe with which I always use Clabber Girl Baking Powder. I'm sure you all are familiar with Pecan Sandies. Keebler has a version of this. Ryan loves pecan, and these melt-in-your-mouth cookies are his favorite! 


Pecan sandies have become my favorite too! Not only are they so easy to make, they are truly so good! The irresistible taste and texture make these cookies a sure hit not only for dessert but for snack too! Ryan loves it with a cup of coffee, and my daughters & I love it with milk! I got this recipe back in 2006 from Gooseberry Patch Online Recipe Box. I love it because it's the simplest pecan sandies recipe I've found that makes absolutely delicious cookies!


Prep Time:~5 mins   Cook Time:~15 mins   Yield: 20-24 pcs. depending on desired size
