Creamy Lemon Chicken with Asparagus and Bacon

My youngest daughter and I were browsing through some magazines the other day when she found this delicious looking recipe from Family Circle March 2014 issue and requested that I make it for dinner. Well, lucky for her, asparagus is in season and I bought two bunches the day before...and we always have chicken breast in the freezer so I really didn't have a reason not to give in to her request. 

So yes, this Creamy Lemon Chicken with Asparagus and Bacon was our dinner last Monday, and it was a big hit! We honestly didn't expect it to be so flavorful, but it was.
I'm truly glad we tried this recipe. It's very simple and super easy to make yet really delicious! The lemon gave it a refreshing taste that we all loved! Definitely a must try!



Stir Fried Beef and Broccoli

If I will be asked to choose my favorite cooking method, I'll definitely choose stir frying. It only involves heating oil in a pan then adding and stirring the ingredients until they are cooked, and you have a delicious meal in less than ten minutes. Stir fried dishes are also healthy and very flexible. You can pretty much toss in whatever combination of meat and vegetables that you have in the refrigerator. What could be better than that?

This Stir Fried Beef and Broccoli that I am sharing with you today is one of my family's favorite stir fry dishes. Not only is it very easy to cook, it's healthy and delicious too. Cutting the ingredients may be a little time consuming, but considering how good this dish is, it's all worth it! You should try it!

Chicken Asparagus Roll-Ups

Christmas is in two weeks! If you're still looking for easy recipes for your Christmas dinner, this Chicken Asparagus Roll-Ups is perfect! It's very easy to make yet so tasty and elegant looking. The best thing is you can prepare it ahead of time.
This is very much like the Chicken Cordon Bleu that I have featured here before. The main difference is the filling. While Chicken Cordon Bleu has ham and cheese, this Chicken Asparagus Roll-Ups has asparagus and cheese. I got this recipe from allrecipes a few years back and this has been a family favorite since then. Because I don't usually have tarragon in my kitchen, I use Herbes de Provence as substitute and I must say, it works well. As for the filling, I sometimes add carrot sticks to make it colorful. We usually eat this with buttered mixed vegetables and rice, but it's perfect with salad or mashed potatoes too.

We all love this! I'm pretty sure you will love it too!

Pork Chops in Creamy Mushroom Sauce

The days are just passing by so fast! I can't believe it's Friday again...which only means that the weekend is here. Before I get totally carried away by the wonderful thoughts of weekend, let me first share with you this recipe that's sure to please the meat and potato lover in you!
This is simply made of browned potatoes and seasoned pork chops simmered in cream of mushroom soup. This is very easy to put together but the result is very tasty! If you are like us who don't dine out on Valentine's Day if it falls on a weekday, you can make this a part of the lovely three or four course dinner that you'll prepare for your family.

Beef and Spinach Lasagna and Giveaway Winner

When I was growing up, Lasagna wasn't popular yet in the Philippines (or maybe just in our province). It was only in college when I first tried it, and I have loved it since then. I love it so much that it didn't take long before I started making it myself even though all I had in the boarding house was an oven toaster. I guess it's the layers of goodness in lasagna that makes me so into it!
Since then until now, lasagna has been one of my favorite pasta dishes. Thu hubs as well as Clarise and Cherlin love it too, so I often make it. I have long been wanting to post my Beef and Spinach Lasagna recipe, but I always don't get the chance to take pictures of it. My lasagna doesn't last long and before I could take a photo, it's all gone! But last week, I was lucky enough to do it! I was able to cook earlier than usual so I had time to take pictures just before dinner time.
